He tested it the hardest way there is.
Kenji lost his right hand at twenty-nine and spent the next eleven years finding out which knives can actually be used with one. Most cannot. A knife you have to force needs a second hand to hold the food still, and he does not have one.
This one does not need forcing, because the weight is in the right place. He is not endorsing it. He is using it, on camera, in one take, every day, because it is the only one that survived him.
